Tutorials on creating custom plots

It depends on what kind of item the author adds to the plot.
If the author adds a static item then it is not intractable (for most things that are normally intractable that have been made static there is a kgsim prefix added for easy sorting.)
If they add a non static item (in the case you mentioned a container) then it is possible for the player to interact with them depending on the type of item.

Hopefully that makes sense.
I want to start my own contribution to have some new plots, does the Sim Settlement toolkit still able to work with SS2? I assume there have been loads of updates and tweaks here and the file that was last updated in 2019 on nexus mods so I assume I need to know something else too? (since that video is based on SS too)

All of the Bethesda Mod School stuff I watched from KG still applied since the CK hasn't changed since I don't know when.
Additionally I recommend requesting access to the SS discord so you can better talk to other creators who can help if you come across any stumbling blocks.

My brain is fried at this point, he can just grab a thing and put it into the render window (his one is called kgSIM building stage)but I cannot, am I missing anything here?

If you follow the tutorials (the PDFs are included in a folder from the add on makers tool kit) it will walk you step by step through everything you need to do starting with the basics and then getting into more complicated stuff.
Without seeing your screen I have no way of knowing what it is exactly you are trying to do or what could be causing the errors.
Ideally you should also be building in the kgSIM building stage. If you aren't that might be the issue. As I stated before, go through each tutorial in order. It will help.

A container record has an inventory field. When the container is spawned, items defined as inventory will be added. Leveled Lists are usually used for this to create a 'random' factor.
